Can I have some balls please mum?

Balls. They are my FAVOURITE thing to make for the girl’s lunch boxes at the moment. There’s a couple of reasons. One, the fun they have when they asking for them and when I ask “who wants balls?”. And two, they are the lazy man’s lunch box paradise. Tick and TICK!
There are so many types of balls. We have been having the date, cacao and coconut variety quite a bit lately. But I thought for this post we might mix it up and try a lemon variety. Another cool thing about balls, is they use the same base ingredients. You just chuck in a few variants and you have a totally new ball in the lunch box.
What You Need
- zest from 2 lemons
- juice of 1/2 a lemon
- 1 cup desiccated coconut
- 1 cup almonds
- 2 1/2 cups of dates
- ½ cup desiccated coconut, extra
What You Need to Do
- Peel the zest from the lemon, then juice it.
- Add all ingredients in to a blender and mix until combined.
- Roll into bite sized balls and cover in coconut.
- Keep in refrigerator.
How easy is that? Are you, like me, now a total ball convert? You probably already were. There’s is no going back now!
