Balls. They are my FAVOURITE thing to make for the girl’s lunch boxes at the moment. There’s a couple of reasons. One, the fun they have when they asking for them and when I ask “who wants balls?”. And two, they are the lazy man’s lunch box paradise. Tick and TICK!

There are so many types of balls. We have been having the date, cacao and coconut variety quite a bit lately. But I thought for this post we might mix it up and try a lemon variety. Another cool thing about balls, is they use the same base ingredients. You just chuck in a few variants and you have a totally new ball in the lunch box.

What You Need

  • zest from 2 lemons
  • juice of 1/2 a lemon
  • 1 cup desiccated coconut
  • 1 cup almonds
  • 2 1/2 cups of dates
  • ½ cup desiccated coconut, extra

What You Need to Do

  1. Peel the zest from the lemon, then juice it.
  2. Add all ingredients in to a blender and mix until combined.
  3. Roll into bite sized balls and cover in coconut.
  4. Keep in refrigerator.

How easy is that? Are you, like me, now a total ball convert? You probably already were. There’s is no going back now!

    Bliss balls are often on the homemade snack menu around here but today we have been finishing off someone’s yummy scrumcious easy peasy delicious zucchinni bread:)

    Love me some balls. Petite kitchen has a delicious lemony one too! Might have to expand my current usual, especially since I have so many lemons from our backyard. Yummers.

    I do love making balls too, I love that you don’t have to turn the oven on for them either, especially on those stinking hot days.
    Lime zest and juice in place of the lemon is delicious too. x

    The ‘ol Breville cyclonic is bouncing around the bench top.
    …. smells amazing. May take forever to combine.

      Hahaha, yes that happens here too! I am going to give the seeds a crack tomorrow. I LOVE almonds SO much though.
