Can I have some balls please mum?

These balls are the easiest, simplest lunch box treats. They take about 15 minutes to make, store beautifully in the fridge and double as an awesome travel snack too.  And if your kid’s allergic to almonds, you can use sunflower seeds, pumpkin seeds, macadamias, cashews or walnuts as replacements.

ZINGY ZANGY LEMON

  • 1 cup raw almonds
  • 2 1/2 cups pitted dates, if using packet dates, soak in warm water for a few minutes
  • 1 cup shredded or desiccated coconut
  • zest of 2 lemons
  • juice of 1/2 a lemon
  • 1/2 cup desiccated coconut, for rolling in

CHOC PNB

  • 2 cups raw almonds
  • 2 cups pitted dates, if using packet dates, soak in warm water for a few minutes
  • 1/3 cup raw cacao powder
  • 1/3 cup peanut butter
  • 1/2 cup chia seeds, for rolling in

JAFFA

  • 1 cup raw almonds
  • 2 cups pitted dates, if using packet dates, soak in warm water for a few minutes
  • 1 cup shredded or desiccated coconut
  • 1/3 cup raw cacao powder
  • zest of 2 oranges

CHOC DATE

  • 1 cup raw almonds
  • 2 cups pitted dates, if using packet dates, soak in warm water for a few minutes
  • 1 cup shredded or desiccated coconut
  • 1/3 cup raw cacao powder
  • 1/2 cup desiccated coconut, for rolling in

APRICOT

  • 1 1/4 cup raw almonds
  • 1 cup dried apricots
  • 1/2 cup pitted dates, if using packet dates, soak in warm water for a few minutes
  • 1 cup shredded or desiccated coconut
  • 1/2 cup pumpkin seeds, for rolling in

STRAWBERRY RIPE

  • 250g / 8.75oz strawberries, hulled
  • 2 cups shredded or desiccated coconut
  • 1/2 cup raw almonds
  • 1/3 cup raw cacao powder
  • 2 tbsp honey

DIRECTIONS

  1. Add almonds to blender and pulse until they have the appearance of coarse breadcrumbs.
  2. Add each ingredient one at a time, and wait until combined before adding the next.
  3. Once final mixture is combined, roll into balls. If it isn’t sticking together, add a couple of extra dates.
  4. Roll the balls in coconut, or your choice of coating.
