Lunchlady vs White Wings, Round Two, Apple and Cinnamon Cake

We know where this series is going, we all know that lunchlady will save the day with her homemade cake and make the White Wings cake come off second rate. But that’s because we all know what’s good. We all know that making food from scratch is better for us.

I guess the point is, now we’ve had our fun with the Anzac Bicuits, to keep re-enforcing with just a couple of extra minutes, your house can smell less like baking preservative 220 and more like apples and cinnamon.

Please don’t think I am being all preachy and telling you what to feed your kids. I am not saying you need to be chained to your kitchen every minute of the day to prove your love for your children, it isn’t my intention. At all. I just want to try and convey that the real stuff isn’t unattainable. That by taking those few extra minutes your kids and YOU! will thank you, for the better tasting, less processed and more loved version of that cake/slice/biscuit/whatever.

So here are the facts. Straight up.

What you need

Homemade

I took my recipe from the BBC Good Food site. Nice and simple recipe!

  • 125g sugar plus 1tsp for sprinkling
  • 250g self-raising flour, sifted
  • 50g butter, diced
  • 3 or 4 apples peeled, cored and chopped
  • 1 large egg, beaten
  • 100ml milk
  • sprinkling of cinnamon
  • pinch of salt

White Wings

Cake mix:

  • Wheat flour
  • Sugar
  • Maize maltodextrin
  • Vegetable fats and oils (emulsifiers , antioxidant )
  • Raising agents (sodium bicarbonate, 450 341)
  • Salt
  • Cinnamon (0.3%)
  • Natural flavour (milk)

Made on a production line that also produces products containing egg, oats, almonds, walnuts and hazelnuts.

Apple Cinnamon fruit mix:

  • Apple (35%)
  • Water
  • Sugar
  • Thickener (1442)
  • Cinnamon (0.2%)
  • Preservative (202)
  • Cloves

Made on a production line that also produces products containing wheat, egg, milk, soy and sulphites.

What to do

Homemade

  1. Preheat your oven to 175C. Place the sugar and sifted flour into a large bowl along with the butter, apples a sprinkling of cinnamon and a pinch of salt.
  2. Then mix the egg and milk and pour into the bowl then combine.
  3. Grease a cake tin (preferably a circular one) and pour in the mixture (which should be fairly wet).
  4. Bake for 35 mins before removing from the oven and sprinkling over the sugar and cinnamon then return to the oven for 10 mins more.

White Wings

  1. Preheat oven to 180˚. Lightly grease a 20 x 20 x 5cm deep square pan. Line the base with baking paper.
  2. Place the slice mix, egg, milk and melted margarine spread in to a medium mixing bowl.
  3. Mix with a wooden spoon until just combined.
  4. Add the apple and cinnamon fruit mix and fold gently in to the slice mixture until well combined.
  5. Spread mixture in to prepared pan.
  6. Bake for 21 – 24 minutes or until a skewer inserted in to the centre comes out clean.
  7. When cold slice in to 12 pieces and serve.
