Delicious Gingerbread
Is it even December if you don't roll up your sleeves and give gingerbread baking a go? Here's a seriously delicious recipe:
To make delicious gingerbread, you'll need:
- 230g / 8oz unsalted butter, at room temperature
- 100g / 3.5oz firmly packed brown sugar
- 100g / 3.5oz caster sugar
- 1 cup golden syrup
- 1 egg
- 700g / 1.5lb plain flour
- 1 tsp baking soda
- 1 tbsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp salt
Method:
- Pop butter in bowl of an electric mixer and beat on high until creamy.
- Add brown sugar and caster sugar, and beat until mixture is no longer gritty.
- Reduce speed to low and gradually beat in golden syrup.
- Add the egg and beat until mixed well.
- In a separate bowl, sift the flour, baking soda, ginger, cinnamon, cloves and salt.
- Gradually add the flour mixture to the butter mixture, beating on low speed.
- Put the dough onto a floured bench and form a smooth mini hill.
- Divide the dough into 4 equal bits, shape into discs and wrap each individually in plastic wrap.
- Put them in the fridge for at least 2 hours.
- Preheat your oven to 200°C / 390˚F / Gas Mark 6.
- Remove dough from fridge and let stand for 5 minutes.
- Roll out dough between sheets of baking paper until it is 5mm thick.
- Cut the dough into shapes using cookie cutters.
- Gently put your biscuits on baking trays lined with baking paper.
- Refrigerate the biscuits for 20 minutes until firm.
- Take out of fridge and pop in oven. Bake for 6 minutes or until lightly browned.
- Cool on wire racks.
