Crispy, Carrot, Cumin and Cous Cous Fritters

I love feeding my kids good food, but I also love spending time doing things other than providing them healthy meals. The days are getting shorter and those daylight hours are becoming quite a premium!

Making something for dinner that doubles as lunch is one of my favourite things to do. There is nothing more satisfying than knowing you’ve got lunch covered while lying in bed wondering what part of the house you left your other ugg boot. It really does give you time to concentrate on the important things.

Fritters are an awesome way to use up random vegetables. Chuck them all in! It doesn’t matter. Everything tastes good fried.

Crispy, Carrot, Cumin and Cous Cous Fritters

What You Need

  • 500g grated carrot
  • 1 cup of plain flour
  • 3/4 cup greek yoghurt
  • 3/4 cup of cooked cous cous
  • 1 tablespoon cumin
  • oil for frying

What You Need to Do

  1. Grate your carrot. Watch your fingers. Pop in a big mixing bowl.
  2. Prepare your cous cous, bring 3/4 water to the boil with a pinch of salt and a drizzle of olive oil.
  3. Remove from heat and add the cous cous. Cover with a plate and leave for 5 minutes. Do not stir!
  4. After 5 minutes, take plate off and fluff up with a fork. I just lightly scrap the fork over the top of the cous cous until it is nicely separated. Don’t rush it. Be gentle to the cous cous.
  5. Add cous cous and the rest of the ingredients to the carrot.
  6. Mix until really well combined.
  7. Heat a griddle to a medium to high heat, with a small amount of oil.
  8. Plop a generous blob in the pan and squash down with spatula.
  9. Fry for a couple of minutes on either side until nice and golden brown.
  10. Place on a paper towel and repeat until you have a TONNE of fritters.
  11. Eat for dinner and save some for lunch!
